Edwards’ world-class cured meats are long-aged to guarantee a flavor profile that best reflects the characteristics specific to free ranged Berkshire pork. S. Wallace Edwards and Sons works closely with Heritage Foods USA and Newman Heritage Berkshire Pork Farm to develop its Cured Hams, BerkBacon and BerkSausage. All pork is processed at Paradise Locker Meats. Newman Farm and Paradise Meats are considered Certified Humane®. As Sam explains, "A local source for charcuterie has the duel benefit of launching new American terroirs while relieving those in Europe that are overtaxed because of high demand." These meats can also be sampled this weekend at the Fancy Food Show in NYC.
