Before we get to the subject of this week’s email we wanted to write a brief note on the passing of one of our closest friends and an Advisory Board member to Heritage Foods USA. Michael Batterberry was a seminal figure in the launching of Slow Food on American shores and he remained an important advisor to Heritage Foods until very recently. As the New York Times explains: “The author of many books on food and other subjects, Mr. Batterberry was considered both a chronicler and a shaper of late 20th-century food culture. In his work, and in his many appearances on television and the radio, he made clear that his interest lay not merely in food per se, but in food as a mirror of the collective national psyche.” Michael and his wife Ariane have founded two of the milestone national food magazines in this century: FOOD ARTS, the publication by and for the country's leading food and drink professionals and FOOD AND WINE, one the country's leading consumer magazines. Together or individually, they have authored eighteen books on food, entertaining, and art and social history. Michael was an elegant and generous man who took the time to make the world a better and tastier place. He will be sorely missed.
Dear Heritage Foods USA Supporter,
As we believe that best way to support a family farmer is to buy from him, today we present a festival of discounts, a party for your fridge and mouth. Remember we ship everything FedEx or UPS Standard Overnight to preserve the cold chain. When you order take advantage of our shipping tiers: the more you order, the more you save! And we have a 100% guarantee of satisfaction – your money back if you are not 100% satisfied with your purchase.
Every business has its slow moments. For us that moment falls during the hot summer months when the external temperature rivals the cooking temperature for our meats. To pass the time we have revamped the Policies Section of our website in an effort to communicate just how much we believe in our foods and maintaining loyal relations with our base. Click here to read. And Heritage Turkeys can be purchased on this email as well.

All The following items are 20% off.
Hamburger (Piedmontese) - Sometimes nothing can satisfy a beef craving better than a good old juicy burger. Our Piedmontese ground beef makes one of the best burgers you have ever tasted. The Piedmontese breed of cattle, which originated in the foothills of northern Italy is home to the Slow Food movement. Along with Angus, Kobe and Chianina, Pied is considered one of the tastiest cattle in the world. It is very tender and many of the country's best chefs love it. Today, a network of family farmers are raising cattle naturally, on a pure vegetarian feed without the use of antibiotics and without added growth hormones. Piedmontese beef has significantly less fat and cholesterol than commodity beef, giving it a healthier profile, along with its flavorful characteristics. Two 8-oz patties per pack, three packs.
Country Style Ribs (Berkshire or Red Wattle): Cut from the blade end of the loin, next to the shoulder, Country Style Ribs are a southern tradition. A great value, they can be grilled, braised, sauteed, or roasted as a rack. And don't forget the Barbecue sauce! Two 2.25 lb racks per pack.
Flatiron Steak (Piedmontese): Also known as the Top Blade, this is a superb steak cut from the chuck, or shoulder of the animal. Chuck steaks are among the most flavorful of all the steaks, so this is a good choice for a real beef lover. Fantastic for grilling or saute, the Flatiron is best served medium to rare. Increasingly popular with top chefs, the flatiron is a great value for a great price. Tri-Tip (Piedmontese): This is a richly flavored cut from the bottom sirloin. It is ideal for roasting, spit-roasting, grilling, or braising. The tri-tip gets its name from its shape and should be cooked whole and sliced across the grain to obtain full tenderness. Piedmontese beef is comparatively healthy, with less fat and cholesterol than traditional beef. Three 2.5 lb Tri-tip steaks, one per pack.
The Short Rib (Piedmontese): This cut has been a heavily used one throughout the world for centuries. From Korea to France, the cut consistently proves itself through its versatility and rich flavor. In recent years, it has greatly increased in popularity on the American culinary scene for the same reasons. Cut from the rib section of the cattle, short ribs carry intense grassy and beefy notes that are best brought out by slow cooking. Simply slow cook them in your favorite braising liquid, be it stock or red wine, with or without vegetables, and let time and low heat work their magic. Half Boston Butt, Bone-In Shoulder (Berkshire and Red Wattle): They say the sweetest meat is near the bone, and we concur. Our Bone-in Boston Butt offers all the great eating of the boneless shoulder, with a little extra flavor given by the bone. We love to braise our Boston Butts, or for the real barbecue enthusiast, the Boston Butt is great in a smoker. Loaded with fat and collagen, this cut stays moist and delicious no matter how long you cook it. One 4lb roast.
Smoked Heritage Ham, Bone-In (Berkshire or Red Wattle): spectacular centerpiece for any event, this is a traditional smoked ham, Missouri Style, made from heritage breed pork for a super moist and buttery texture. Given a Maple Sugar glaze while it is smoked this sweet and savory ham makes a great meal any time. Its fully cooked, so if you want it hot, just give it 30 minutes or so in the oven, or serve it cold at a picnic or event. 18lbs roast.
Ribeye 14oz (Piedmontese): Ribeye steak is one of America's favorites, and for good reason. Cut from the rib cage, these steaks are essentially the same as the holiday standing rib roast, heavily marbled, juicy and flavorful. This is truly a luxurious steak that offers a superb beefy taste with a supremely tender texture. Our steaks come from the Piedmontese breed of cattle, which originated in the foothills of northern Italy, home to the Slow Food movement. Fresh Ham Bone-In (Berkshire or Red Wattle): Fresh Ham, Bone-in: The haunch of the pig, and for most Americans, it is always a smoked or cured product. But it doesn't have to be. Roast it whole for a big crowd, the bone in ham is a great value and a great taste. Cut it into chunks for a stew, or slices for a pan-fried dinner. Serve it with grits and eggs for breakfast. It has as many applications as you can come up with. 1 Roast, 22lbs.
Fresh Ham Boneless (Berkshire or Red Wattle): The fresh ham is the haunch of the pig, and most people only know it when it is smoked. Its a great meaty cut, loaded with flavor and very juicy. Typcially roasted, it feeds a crowd, or it can be cut into steaks and cooked like a pork chop. Cube it for a savory pork stew.. there is no end of use for this value cut. One Roast, 11lbs
Kansas City Strip (Berkshire or Red Wattle): Our Kansas City Strip is a boneless version of the porterhouse, with both loin and tenderloin in one fabulous pork steak. The ample fat cap keeps the meat moist when cooking, either on the grill, or in a sautee pan. Tender and flavorful, the KC strip can stand on its own, or can be seasoned in any number of ways; with a teryaki glaze, a sweet and sour marinade, white or red wine with herbs and garlic, or just good olive oil, salt and pepper. Any way you slice it, the KC strip is one of our best cuts. 1 Strip, 2.5lbs
Half Boneless Center Cut “Canadian” Loin (Berkshire or Red Wattle): 3.25 lbs of pure juicy pig perfection, versatile, delicious, and easily cooked. Slice it into steaks for individual portions, or roast it whole for a classic presentation. Try it roasted with a dry rub of thyme, garlic, allspice, and crushed bay leaf. 1 3.25lbs roast
