Guinea Fowl by Dawn Endico.Dear Heritage Foods Supporter,

We are thrilled to offer for the first time pearl guinea fowl, also known as pintade, faraona, African pheasant or guinea hen, a bird native to West Africa.  These fowl are raised on Carey Farms in Lindsborg, Kansas another member of the Good Shepherd Ranch farming group.  The pearl guinea fowl have a gamey but delicate texture, are inherently juicy and offer consistently rich and deep flavor, similar to that of a pheasant. Although they appear to be quite large, the birds are typically small in weight as their bones are small so the carcass produces a relatively large amount of meat.

This guinea fowl is an insect and seed eating, ground-nesting bird with a featherless head and spangled grey plumage.  Pearl guinea fowl are monogamous breeders.  The females often lay their eggs out in the fields and hatch their young, called “keets” all by themselves.  The keets are bright-eyed and very active, but also quite timid.  Native to the dry areas of Africa, the keets are vulnerable during their first two weeks to damp environments, and can die from following the mother through dewy grasses. However, after those two weeks, pearl guinea hens are probably the hardiest of all domestic land fowl.

Most farmers love having guinea fowl since they control deer ticks, wood ticks, grasshoppers, and most other insects.  They kill snakes, and alert humans to anything unusual. Their call will discourage rodents.  Both males and females make a single syllable, machine-gun like alarm call, but only the females have a two syllable call. In fact, it sounds like they're saying "buckwheat."
