In early 2011 the famous cheesemonger Anne Saxelby alerted us here at Heritage that goat dairy farms need help finding an outlet for male goats. Now it’s late 2011 and together we have moved 480 goats for artisan cheese makers!
We want to give special thanks to our own Erin Fairbanks for organizing the farms, processing and shipments of these goats. Erin is a sustainable food leader of the first degree and we look forward to more Americans learning that themselves firsthand as she continues to take on new projects for us and others. Thank you to Consider Bardwell Farm and Angela Miller who was the first farmer to jump headfirst into this project. Fourteen other farms followed and we thank them too: Twig Farm, Sunny Acres Farm, Lafontaine Farm, Shannon Creek Farm, Asgaard Dairy, Caz Acrez Farm, Strait Gait Farm, Indian Hill Farm, Highwood Farm, Mounts Creek Farm, Miz-inka Farm and Chattlehope Farm. Very special thanks to Eagle Bridge Custom Meats, one of the best processing facilities we have ever seen.
Special thanks too to the chefs, both in home and restaurant kitchens, who invested in a somewhat unknown product. We were so happy to learn how goat made an excellent addition to their menus. With the passage of the seasonal cycle of dairy goats, we find ourselves in the full swing of Heritage Turkeys. The birds are doing splendidly and all plans are in place to deliver them safely to homes around the country. Our turkeys are raised by Frank Reese of Good Shepherd Turkey Ranch according to the highest standards of animal husbandry, and using only 100% American Poultry Association approved breeds, dating back generations.
Now that we're selling out of certain weight categories (14 lbs and above), we are proud to introduce Heritage turkeys from the Animal Welfare Approved Leaping Waters Farm in Virginia, which unlike last year will not be processed at a Kosher facility. His birds have a unique terroir due to the rich ecosystem and the variety of native grasses found on the farm. Leaping Waters is located on 600 acres in the heart of the southern Appalachian Mountain's between the Allegheny Highlands and the Blue Ridge Mountains.

All turkeys will be shipped in their own box.

Turkeys are kept at a temperature of 28 degrees, which will keep them safe, not fully frozen.
All turkeys come with neck and gizzards.
