Dear Heritage Foods USA Supporter,

Fresh off the madness of our busiest and biggest Turkey Season yet, over 7500 birds sold, we’d like to take a few moments to offer our own thanks to the folks who are building a real and viable solution to the current industrial food system.

We thank farmers, young and old, rural and urban. We thank processors like the folks at Paradise Locker Meats who have never missed a week processing tons of pork, lamb and beef for restaurants or home kitchens around the country. We thank the chefs who invest in good food for standing on their feet in hot kitchens to dazzle the public with the taste that lead to more purchases. And we thank you, the thousands of cooks at home who care enough and are willing enough to make a choice in the way you and your families eat. In short, we thank those building solutions rather than simply criticizing those that exist.

This last year included a visit to Washington DC to visit the White House chef, a recent Best and Brightest feature in Esquire Magazine and continued growth – Heritage Foods brought in more than 7 million dollars -expanding an economy that supports directly independent farms and processors.

We want you to know that we are just getting started and that day in and out we’ll be here, on the phones, at the farms, in the processing facilities, getting things done, just as we have since 2002. In the coming year, expect to see new farmers, products, improvements in efficiency and service and the same commitment to making a difference.

As always, this email sells food to help independent farmers. Today we feature rare breed lamb – the best in the country – and hams for the holidays, just heat and eat.

Frozen Half Karakul Lamb (about 11.5 lbs) – Overnight Shipping Included - $206 (about $17.91 / lb)

Each Half Karakul Lamb includes the following cuts:

1 Boneless shoulder (about 2.4 lbs)
1 Bone-in leg (about 4lbs)
Sirloin chops (about 1 lb)
Rib and loin chops, packaged individually (about 2.5 lbs)
2 Shanks (about 1 lb)
Riblettes (about 1 lb)

The Karakul is one of the oldest breeds of sheep, native to Central Asia.  The region they are from has high altitude and scant vegitation and water, making the Karakul a very hardy breed.  They are a broadtail, or fat tail sheep. They generally come in black although occasionally other colors are seen.  Since the fat is stored in the tail head, even older animals do not have that muttony taste, and the lamb meat has very little fat.

The Jacob is an old, "unimproved" breed, meaning it has not been crossed with other fine wool or meat type sheep.  They retain the more primitive type, are fine boned and have a high carcass yield for their size.  They are very striking in appearance,  black and white with up to 6 horns.

Each Half Navajo-Churro Lamb includes the following cuts:

1 Boneless shoulder (about 2.5 lbs)
1 Bone-in leg (about 3.7 lbs)
3 Sirloin chops (about 1 lb)
12 Rib and loin chops, packaged individually (about 2 lbs)
2 Shanks (about 1 lb)
Riblettes (about 1.2 lb)

The Navajo-Churro is the descendant of the Spanish sheep brought to New Mexico by explorers in the 16th century.  The sheep quickly became an integral part of the southwestern culture.  The Navajo Churro nearly became extinct twice, in the 1860's when the Navajo people were forced on to the reservation, and in the 1930's during a government mandated "reduction" to offset the effects of drought.  The meat of the Navajo-Churro is lean with a distinctive sweet flavor.  As the fat of this breed concentrates around the internal organs, meat from animals even a year and a half old does not taste muttony and has been described as having a herbal, grassy flavor.

All of these lambs have been raised on pasture, with some whole oats and alfalfa for a little extra energy.  They were harvested at about 6 months old, quite tender and flavorful.
